ZOI's wine list is built to complement the tasting menus and terrace evenings, bringing together rare Croatian labels, Mediterranean classics and thoughtful international selections. It is a list designed for discovery—guided pairings for ECHO and TERRA, or bottles chosen with the sommelier for your own evening.
Pairings for ECHO & TERRA
Each seven-course tasting menu is accompanied by a curated wine pairing that follows the menu's rhythm: crisp whites and pet-nats to open, structured reds and aged whites through the heart of the meal, and something rare or oxidative to close. Non-alcoholic pairings are equally considered, shifting through ferments, infusions and verjus to match each course.
Pairings are flexible so our sommelier is always available to adapt them to your preferences or discuss alternatives. For guests who know exactly what they want, the full list is there to explore bottle by bottle.

The list
The cellar emphasizes Croatia's native varieties—Posip, Plavac Mali, Malvazija, Crljenak, Graševina—alongside Sicily, Priorat, the Rhône and producers from Burgundy to the Mosel who share a sense of place and restraint. There are also mature vintages and small-parcel wines chosen specifically for the terrace's light and the stone dining room.
By-the-glass options rotate seasonally and always include something crisp for aperitifs, a lighter red for early courses, and a more generous pour for the table's final stretch. The sommelier keeps a few surprises in reserve for guests who enjoy being led by instinct rather than prescription.

Special occasions & larger tables
For honeymoons, celebrations or private gatherings of more than twelve, the wine team can design a bespoke pairing or select magnums and larger formats from reserve stock. Early conversations by email help ensure the right bottles are ready for your evening.

Corkage is not offered to maintain focus on the curated list, but exceptions can be discussed for very special bottles.
